Twin Tuesday: Quick Cuisine

As mentioned previously, I am a teacher and volleyball coach. This leaves VERY little time during the fall for… well anything else. I love to cook, and I have some great recipes. Fall and winter are my favorite times to cook because I love the warm comfort food. However, after working 70 hour weeks every week, the last thing I want to do is come home and cook.

That’s why I love meals like the one I made last night, which are super quick and super easy. It’s called Cheesy Salsa Chicken, and it only requires three ingredients…can you guess what they are?

I ‘invented’ this recipe a few years ago when I had nothing in my fridge but some chicken and half a jar of salsa. It turned out to be really good, and now we have it quite a bit. I usually heat some oil (whatever kind I have on hand) to cook my chicken in. However, you can also use a non-stick pan and/or some cooking spray. Brown the chicken and cook through.

Pour salsa on top and cover, letting the salsa heat thoroughly. I used my home-grown, home-canned salsa from my garden of veggies this summer. (Make fun of me but these canned foods are awesome!) However, I have made this in the past with store bought salsa and it was delicious also.

Finally, add cheese to the top and let it melt. How good does this look? And so fast and healthy (except for the mound of cheese… feel free to use less, but hey, I run). I usually serve this with white rice or Spanish rice. We rarely have leftovers with this meal, but it does heat up well for a lunch the next day!
